medium bowl.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Stir to form a runny mixture.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Allow the mixture to rest in a warm environment for about 15 minutes or until is foamy and doubled in size.<\/span><\/p>\n<h4 style=\"text-align: center;\"><b>Make the dough &amp; proof<\/b><\/h4>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">In the bowl of a stand mixer add the remaining flour, sugar, and the preferment dough you made before.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Add the egg, nata, vanilla extract, butter, and salt.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Set the medium speed and knead until a smooth dough forms.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Slightly grease a large bowl with butter or oil.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Oil your hands with a bit of oil and remove the dough from the bowl.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Quickly form a ball and place it in the bowl.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Cover with cling film and allow to proof until doubled in size (from 1 to 3 hours, depending on the room temperature).<\/span><\/p>\n<h4 style=\"text-align: center;\"><b>Make the gorditas<\/b><\/h4>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Slightly flour a working surface and transfer there the dough.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Flour a rolling pin and roll the dough into a sheet about \u00bc-inch (1 cm) thick.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">With a 2.75-inch (7cm) round cookie cutter, cut the dough to form the gorditas.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">As you cut them, place them in a lightly floured baking sheet.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Reshape the dough scraps and continue to cut out additional rounds until all dough is used.<\/span><\/p>\n<h4 style=\"text-align: center;\"><b>Second proof<\/b><\/h4>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Cover the gorditas with cling film and allow them to proof in a warm environment for 30 minutes.<\/span><\/p>\n<h4 style=\"text-align: center;\"><b>Cook<\/b><\/h4>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Heat a comal or iron-cast pan over medium-low heat.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Carefully, add as many gorditas fit in the pan and cook for one minute or until you\u2019ll see the bottom starts to get brown and crispy.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Gentle, flip gorditas and keep cooking for another 5-6 minutes to make them puff and cook evenly on the inside (read notes).<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Gorditas will be ready when golden brown on the top and bottom sides.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Transfer them to a serving plate and wrap them with a kitchen towel to keep them warm.<\/span><\/p>\n<h3 style=\"text-align: center;\"><strong>NOTES<\/strong><\/h3>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">You can substitute nata with:<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">English clotted cream.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Mascarpone cheese.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Kaymak (Turkish cream)<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Cr\u00e8me fraiche.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Whipping cream (whipped to the point it starts to become butter).<\/span><\/p>\n<p style=\"text-align: center;\"><b>About the cooking:<\/b><\/p>\n<p style=\"text-align: center;\"><span style=\"font-weight: 400;\">Cooking the gorditas is the most important step as you don\u2019t want them to be raw on
