Directions:
Prepare the Fruit:
Wash and prepare all the fruit. Combine the strawberries, blueberries, pineapple, grapes, mango, and banana (if using) in a large mixing bowl.
Prepare the Cheesecake Dressing:
In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the granulated sugar and vanilla extract, and beat until well combined.
Mix in the sour cream until smooth.
In a separate bowl, whip the heavy cream until soft peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Combine the Fruit and Dressing:
Gently fold the cheesecake dressing into the fruit mixture, being careful not to break up the fruit too much.
Chill and Serve:
Cover and refrigerate the fruit salad for at least 1 hour to allow the flavors to meld and the dressing to chill.
Serve chilled.
