Green Chile Spaghetti with Green Chile Chicken Meatballs and Green Chile Garlic Bread

Ingredients (Serves 4-6):

For the Green Chile Chicken Meatballs:

1 lb (450g) ground chicken

1/2 cup roasted green chiles (Hatch, Anaheim, or poblano), diced (or canned, drained)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 garlic clove, minced

1 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil (for cooking)

For the Green Chile Spaghetti:

12 oz (340g) spaghetti

1 tbsp olive oil

1 small white onion, diced

2 garlic cloves, minced

1 cup roasted green chiles, diced (or canned, drained)

1 cup chicken broth

1 cup heavy cream (or Mexican crema)

1/2 cup grated Monterey Jack or cheddar cheese

1/4 cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

For the Green Chile Garlic Bread:

1 loaf French bread, sliced into 1-inch thick pieces

1/2 cup unsalted butter, softened

2 garlic cloves, minced

1/4 cup roasted green chiles, diced (or canned, drained)

1 cup shredded Monterey Jack or cheddar cheese

1 tbsp chopped fresh cilantro

Salt to taste
