Smothered Green Chile Bean Burrito

Directions:

Prepare the Green Chile Sauce:

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up into crumbles as it cooks.

Once the beef is cooked, add the flour to the skillet. Stir well to incorporate the flour into the beef and cook for about 2-3 minutes until the flour is well mixed and cooked.

Add the diced green chiles and diced onion to the skillet. Stir to combine.

Pour in the chicken broth and season with salt, pepper, and garlic powder to taste.

Bring the mixture to a hard boil, then reduce the heat and let it simmer for about 15-20 minutes, stirring occasionally, until the sauce thickens.

Assemble the Burritos:

Warm the flour tortillas in a dry skillet or microwave until they are pliable.

Spread a layer of refried beans down the center of each tortilla.

Sprinkle a portion of the shredded cheese and diced onion over the beans.

Add a few spoonfuls of the green chile sauce over the cheese and beans.

Roll the tortilla into a burrito by folding in the sides and then rolling from the bottom up.

Smother the Burritos:

Place the assembled burritos on a serving plate.

Generously ladle the green chile sauce over the top of each burrito.

Sprinkle additional shredded cheese over the top.

Serve:
