1 small white onion, diced
2 garlic cloves, minced
1 cup roasted green chiles (Hatch, Anaheim, or poblano), diced (or canned, drained)
1 cup diced fresh tomatoes (or 1 cup canned diced tomatoes, drained)
1 tsp ground cumin
1 tsp chili powder
8 oz (225g) elbow macaroni
3 cups beef or chicken broth
1 cup water
1 tbsp olive oil
Salt and pepper to taste
1/4 cup chopped fresh cilantro (optional, for garnish)
