Instructions

Cook the ground beef filling:

In a large skillet, cook the ground beef over medium heat, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat if needed.

Add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another 1 minute.

Stir in chili powder, cumin, smoked paprika, and oregano, cooking for 1 minute to bloom the spices.

Add tomato sauce and beef broth (or water), stirring to combine. Simmer for 5-7 minutes until the mixture thickens. Season with salt and pepper to taste. Set aside.

Assemble the tacos:

Heat a large cast-iron skillet or griddle over medium heat. Add a small amount of vegetable oil to coat the pan.

Place a tortilla in the skillet, sprinkle a thin layer of shredded cheese on one half, and spoon about 2-3 tablespoons of the ground beef filling over the cheese.

Fold the tortilla in half over the filling, pressing gently to seal. Cook for 2-3 minutes per side, or until the tortilla is crispy and the cheese is melted. Repeat with the remaining tortillas, cheese, and filling, adding more oil to the skillet as needed.

Serve:

Arrange the crispy tacos in the skillet for presentation or transfer to a platter.

Garnish with chopped cilantro, diced tomatoes, shredded lettuce, sour cream, or salsa, if desired.

Serve immediately while hot.

Notes

For a spicier filling, add a diced jalapeño or a pinch of cayenne pepper with the spices.

You can also bake the tacos at 400°F (200°C) for 8-10 minutes on a baking sheet for a hands-off approach.
