Charro Beans (Frijoles Charros)

Ingredients (Serves 6-8)

For the Charro Beans:

1 lb (450g) dried pinto beans (or 4 cans of pinto beans, drained and rinsed)

6 slices bacon, chopped

1 small white onion, diced

2-3 jalapeño or serrano chiles, seeded and diced (adjust for heat)

2 garlic cloves, minced

2 medium tomatoes, diced (or 1 can diced tomatoes, 14.5 oz)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp dried oregano

6 cups chicken broth or water (if using dried beans, adjust as needed)

1/2 cup fresh cilantro, chopped

Salt and black pepper to taste
