Instructions

1. Marinate the Chicken

Blend all marinade ingredients until smooth.

Toss wings with marinade.

Cover and refrigerate at least 4 hours or overnight.

2. Cook the Jerk Wings

Oven Method

Preheat oven to 400°F (200°C).

Place wings on a baking rack over a lined baking sheet.

Bake 40–45 minutes, turning halfway through.

Broil 3–5 minutes for charred edges.

Grill Method

Grill over medium-high heat.

Cook 20–25 minutes, turning frequently.

Brush with extra marinade while grilling.

3. Make the Rice

Bring water, butter, and salt to a boil.

Add rice.

Cover and simmer 18 minutes.

Rest 10 minutes and fluff.

4. Make the Mac & Cheese

Cook macaroni until al dente.

Melt butter in a saucepan.

Whisk in flour and cook 1 minute.

Slowly add milk and whisk until thick.

Add cheeses and seasonings.

Stir in macaroni.

Transfer to a baking dish.

Bake at 375°F (190°C) for 15 minutes until bubbly.

5. Make the Fried Cabbage

Cook bacon until crisp.

Add sausage and brown lightly.

Add onion, bell pepper, and garlic.

Cook 3–4 minutes.

Add cabbage and Cajun seasoning.

Cook 12–15 minutes until tender.

Assemble the Plate

Serve:

A bed of fluffy white rice

Jerk chicken wings on top

Creamy baked mac & cheese

Southern cabbage with smoked sausage
