
Instructions
1. Bake the Potatoes
Preheat oven to 400°F (200°C).
Rub potatoes with olive oil and sprinkle with salt.
Bake for 50–60 minutes until fork-tender.
Let cool slightly.
2. Cook the Steak
Season steak with garlic powder, paprika, salt, and pepper.
Heat a skillet over medium-high heat with olive oil.
Sear steak 3–4 minutes per side (or desired doneness).
Rest for 5 minutes, then cut into small bite-sized cubes.
3. Prepare the Filling
Slice potatoes in half lengthwise.
Scoop out most of the potato flesh into a bowl, leaving a thin shell.
Mash potato flesh with butter, sour cream, milk, cheddar cheese, mozzarella, half the bacon, and half the green onions.
Season with salt and pepper.
4. Stuff the Potatoes
Fill each potato shell with the mashed mixture.
Top with additional cheddar cheese.
5. Second Bake
Return potatoes to the oven.
Bake at 375°F (190°C) for 15–20 minutes until cheese is melted and bubbly.
6. Finish
Top with steak cubes.
Sprinkle remaining bacon, green onions, and parsley.
Serve hot.
Optional Steakhouse Sauce
Mix:
¼ cup sour cream
1 tbsp mayonnaise
1 tsp Dijon mustard
½ tsp garlic powder
Splash of lemon juice
Drizzle over the potatoes before serving.
